This spiced, sugar-glazed gammon is great served with homemade spiced mango chutney.
2kg smoked gammon joint, boned and rolled
1 onion, peeled and quartered
2 dried bay leaves
12 black peppercorns
1 x 500ml carton clear apple juice
40g Demerara sugar
1/4 teaspoon dried chilli flakes
1/2 teaspoon coriander seeds, lightly crushed
1/2 teaspoon cumin seeds, lightly crushed
1 tablespoon Dijon mustard
